version-check: cover minecraft's deps and the build/server duplicates
minecraft/server was missed in the original sweep since its lookup
comments didn't match the github releases/tags pattern; paper, dynmap,
and geyser now get the same marker.
Also add markers to the three build/server (or /otp) duplicate version
vars (bin, dendrite, pleroma), which were intentionally skipped before
since they mirror their build role's version rather than pinning an
independent upstream check. Point them at the build role's file instead
of a URL so one grep still finds every instance; documented in the
README alongside the existing URL form.
